I love margaritas on the rocks, I love them frozen.  I love margaritas made with tequila, I love them with mezcal and sotol.  I love margaritas rimed with straight lime juice, I love them blended with fruit juice or maybe a kick of jalapeño.  I love them on Cinco de Mayo, Dos de Mayo (my bday!), National Margarita Day, and I love them on any other day that friends are game to meet up for an impromptu round of happy hour margs.  I love me a good margarita.

I have never tried a strawberry version (I can be quite traditional in my requirements and love of pure lime juice that way 😉 ) but you make a strong case for it and your photos are just gorgeous! Combine mango, rum, and lime juice in blender until smooth. Add mint leaves and blend again. Add club soda or seltzer and stir. Pour over ice and garnish with thin slice of mango.
3 cups ice Add lime quarters and mint to the cup of a shaker. Muddle the mint and lime. Add the rum, pineapple juice, and coconut milk. Add a handful of ice to the shaker. Place the lid on the shaker and give the mixutre a few vigorous shakes. Pour the mixture over ice and top with club soda. Garnish with a wedge of lime, fresh mint, and slice of pineapple.

Quite good! The mint and sugar, though, should be quickly chopped in a mini-food processor then crushed with a wooden spoon. This creates a better mixture to saturate the sugar and rum, and finally strain. For a ‘dirty’ mojoto, save some of the chopped crush and put a dash of it in glass before adding club soda.     Here is the key!  Fresh Sweet and Sour Mix.  It is basically a lemon lime simple syrup.  And it has to be made with fresh lemons and limes.  Of course the ratios of it with the alcohols is also key, but I really think it is the sweet and sour mix that makes this recipe.
