  3. what are your thoughts on using agave syrup vice simple syrup? we used it so wouldn’t have to mess with heating/cooling. thanks 🙂
    You want your drink to be cold and you want it cold now. Give your ingredients a good, hard shake and the pour the liquid over a glass packed with ice. Crushed ice is classic, but melts more quickly than bigger cubes. Your best bet is to really pack that ice in there — or, if you’re not a stickler for tradition, use larger cubes.

    3 Strain the rum. Fill a glass with ice. Set a small mesh strainer over the glass and strain the mint mixture. Use a spoon to press out every last drop of rum from the paste. (Use a large bowl and strainer if that’s all you have then transfer to the glass. Whatever works for you.)

  8. Fill individual glasses halfway with ice, then 2/3 of the way full with the mojito mixture, then top each glass with  club soda. Enjoy!

    Do ahead: Over medium heat, add sugar and water in a small pot. Bring to a boil. Add the 1 cup mint leaves and boil 1 minute. Remove from heat and let sit 30 minutes to infuse. Strain infused syrup into a container and set aside. (Any leftover syrup can be stored in the fridge for future use.)
